TASTING NOTES

With a lovely deep garnet hue, the nose of sweet dark cherry, blood orange and wild savoury spice gives way to a palate of bright cherry, ripe raspberry, savory macerated red fruits and forest floor earthy notes. The supple tannins, fresh acidity and spicy oak plays harmoniously along in the background and provides structure and drive to the wine.

Wine Making Notes

A blend of clones including MV6, 114, 115 and G5V15. Hand harvested grapes were hand sorted, then destemmed into 2T open fermenters. A short cold soak followed before being inoculated with RC212 yeast. At the completion of fermentation the wine was allowed to macerate on skins for an additional 5 days before being pressed to tank and then transferred to French oak barrels (31% new).  Malolactic fermentation proceeded naturally. The wine matured for 11 months in barrel prior to blending and bottling.
