Tasting Notes

Our distinctive Cabernet Sauvignon shows sweet blackcurrant fruit, dark berries, cedar and chocolate characters. A deep purple red, it’s emboldened with fine savoury tannins and spice that you’ll only find in a perfectly aged wine. A hint of earthiness leads into just the right amount of chary oak to finish.

Wine Making Notes

Hand harvest grapes were destemmed into 2T open fermenters followed by a short cold soak before being inoculated with RC212 yeast. At the completion of fermentation the wine was pressed to French oak barrels (20% new) for MLF. The wine matured for 11 months prior to blending and bottling.
